What does Kharkiv region taste like? I don't mean the taste of European or Asian cuisine, which is offered in numerous Kharkiv gastro cafes, bistro sandwich bars, and fast food chains, but the taste of local dishes?

What is traditional Kharkiv cuisine?

 

This is a tricky question! It's hard to answer right away. After all, the first thing that comes to mind is Ukrainian dishes cooked in all regions of Ukraine - borsch, dumplings, stuffed cabbage rolls, roast.

 

But what are some purely regional dishes that are not cooked anywhere else but in Kharkiv region and can surprise guests?

 

“Liman's 'Naked Borsch', Sakhnovshchyna's 'Korovai', and Zmiiv's 'Fish in White Marinade'. Have you heard of them? These are Kharkiv specialties of local cuisine.
